John Witherspoon Quotes  

president of the College of New Jersey, founded in 1746 by the Presbyterian Church, which later became Princeton, preached this sermon on July 31, 1776: The Dominion of Providence Over the Passions of Men

"The doctrine of divine providence is very full and complete in the sacred oracles. It extends not only to things which we may think of great moment, and therefore worthy of notice, but to things the most indifferent and inconsiderable; Are not two sparrows sold for a farthing, says our Lord, and one of them falleth not to the ground without your heavenly Father; nay, the very hairs of your head are all numbered. It extends not only to things beneficial and salutary, or to the direction and assistance of those who are the servants of the living God; but to things seemingly most hurtful and destructive, and to persons the most refractory and disobedient. He overrules all his creatures, and all their actions . . . Michigan Blueberries and Oatmeal Streusel Bundt Cake  

While on vacation we some times enjoyed eatin out and we some times enjoyed cooking our selves. Michigan blueberries are delicious so fresh-out-of-the-oven Blueberry Oatmeal Streusel Bundt Cake is one thing we made.

Blueberry Oatmeal Streusel Bundt Cake

Streusel Ingredients:
1 cup packed brown sugar
2/3 cup all-purpose flour
1/2 cup uncooked oatmeal
1 teaspoon ground cinnamon
1/4 tsp ground ginger
3/4 cup butter
1 teaspoon lemon zest

Batter Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup granulated sugar
2 eggs
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup milk
2 cup fresh blueberries
1/2 cup confectioners sugar for dusting

Drizzle Ingredients:
1/2 cup Confectioners sugar
2 teaspoons milk
1 tablespoon softened butter
1 1/2 tablespoon freshly squeezed lemon juice

Directions:
Heat oven to 350 degrees. Coat a bundt pan well with cooking spray.

Mix streusel topping ingredients by cutting in butter so it is crumbly, then add lemon zest. Layer 1/2 of streusel mixture and 1/2 cup blueberries in the bottom of bundt pan. Set rest aside.

For cake batter, in a large bowl, beat 1/2 cup butter until creamy; add 1 cup granulated sugar, beat until fluffy; add 2 eggs and vanilla, beat until fluffy.

In another separate bowl, whisk together 2 cups flour, baking powder, and salt.

Then, ALTERNATING between the flour mixture and 1 cup milk, add them to the sugar/butter/egg mixture beating well after each addition.

Finally spread half the batter in the prepared pan which has the streusel/blueberries in the bottom; then layer the rest of the streusel mixture and the rest of the blueberries next; add remaining batter.

Bake at 350 degrees for 60 minutes, until golden brown and checked with wooden toothpick.

While baking make lemon drizzle for individual slices: combine confectioners sugar, milk, butter and lemon juice; if too thick add small drops of more lemon juice until it's the desired consistency.

When it's finished baking, remove pan to wire cooling rack. Invert onto a plate after cake has cooled and dust with confectioners sugar. Slice and add lemon drizzle to each individual slice.

The recipe didn't call for the almond extract, the lemon zest in the streusel or a lemon drizzle but I changed it a bit for a yummy summery touch.

Sand Dune Flowers  


Growing in the dunes right outside the door of our cottage is this beautiful dune flower and from search the internet for dune flora I think this is a Puccoon (Lithospermum canescens) which is of the Borage (Boraginaceae) family. It's 5 tubular petals reminds me of Dame's Rocket (purple) that blooms in my garden in the spring.

The Tastiest Ice Cream  





One of the best places we ate was at the Country Dairy Farm Store & Deli. It's a family owned dairy farm and all their dairy products are made right there on their farm so it's fresh. Their cows are cows not treated with rBST, more commonly known as Bovine Growth Hormone so all their products of rBST FREE.





















You can eat out side and enjoy the view of their farm but at different times during the day you will also have a the smell of the farm too. We chose to eat inside.










One of the basic but delicious meals, a grilled cheese platter. Very Good.









The Black Cherry ice cream was best I've ever tasted.

Back from Lake Michigan vacation  

Well, I've been back for a couple of days now and trying to get back in the swing of things. This is what I left behind! It's always hard for me to leave but it's good to be back home. I've had tomatoes ripen while I was gone and my mother brought some of them in .... they're all eaten already. Much tastier than the store bought ones. Our humid, tropical southern weather continues with a heat advisory ... temps have been in the 90's, here and across the nation. Trying to get myself motivated to paint but that will have to wait until it's cooler, in September. Instead, I'm getting my lesson plans and schedule ready for school to start in a few weeks, after Labor Day AND still working on getting some more herbs started for inside.
